Created especially for Huka Lodge, this exciting new two-night cultural exchange package introduces guests to the natural world of the Maori via the Ngati Tuwharetoa tribe’s long-established tradition of living well from the land. With the assistance of local ‘iwi’ tribal member, and passionate bushman, Tom Loughlin, guests will go into the wild to forage and learn about the Maori spiritual values surrounding flora and fauna. The Maori people’s immense respect for sustainability has always recognised how closely this was entwined with their very survival and existence.
Tom will share his Maori perspective, in his very engaging and fun way, while leading guests on his personal flora and fauna foraging expedition. Each itinerary will be unique as Tom will consider the seasons, the temperature and the lunar cycle before deciding where to take the guests, and what will be likely to be on the menu.
Once the guests return to the Lodge, Executive Chef, Paul Froggatt will take over – with a cooking demonstration based on using his great culinary skills to turn these indigenous ingredients into dishes that have a place on his fine dining menu. Paul loves the challenge of the unusual and always shows great respect and integrity in the way he handles food. Paul has embraced this opportunity to work with such unique ingredients and has learned so much through this collaboration with Tom. Guests will be intrigued to taste the dishes that they have foraged for, having shared much in the way of insightful exchange, and having gained authentic new ways of connecting to our land.
